Easy Way to Cook Fried Rice in 2023
Ingredients:
- 3 cups of long-grain rice
- 2 cups of chicken broth or water
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of vegetable oil
- 1 teaspoon of curry powder
- 1 teaspoon of thyme
- 1 teaspoon of white pepper
- 1 teaspoon of salt
- 2 cups of mixed vegetables (carrots, green beans, peas, sweet corn)
- 2 cups of cooked chicken, shredded
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of sesame oil
Step 1: Rinse and soak the rice Firstly, rinse the rice in cold water to remove excess starch. Then, soak the rice in water for 30 minutes. Drain the water and set the rice aside.
Step 2: Prepare the vegetables and chicken Wash and cut the vegetables into small pieces. Shred the cooked chicken into small strips. Set the vegetables and chicken aside.
Step 3: Cook the rice In a large pot, heat the vegetable oil over medium heat. Add the diced onions and minced garlic and sauté until fragrant. Add the curry powder, thyme, white pepper, and salt and stir to combine. Add the rice to the pot and stir to coat the rice with the spice mixture. Pour in the chicken broth or water and bring to a boil. Reduce the heat to low, cover the pot, and let the rice cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
Step 4: Stir-fry the vegetables and chicken While the rice is cooking, heat another pan or wok over medium-high heat. Add the mixed vegetables and stir-fry for 2-3 minutes, or until the vegetables are tender but still crisp. Add the shredded chicken and continue to stir-fry for another 1-2 minutes. Add the soy sauce, oyster sauce, and sesame oil and stir to combine.
Step 5: Combine the rice and stir-fried vegetables and chicken Once the rice is cooked, fluff it up with a fork. Add the stir-fried :vegetables and chicken to the pot of rice and stir gently to combine. Make sure the vegetables and chicken are evenly distributed throughout the rice.
Step 6: Serve Garnish with some chopped scallions or parsley, and serve hot.
